Ingredients for making coconut ice cream with condensed milk:

 1 large dry coconut

 3 cups of liquid milk

 0.66 cup of condensed milk

 ½ cup cornstarch (cornstarch)

 ¾ cup of refined sugar

 1 tablespoon of vanilla essence (optional)

How to make coconut ice cream with condensed milk:

First put half a liter of milk (500 ml, reserving the remaining 250 ml) in a pan and add the condensed milk and cornstarch.

Heat and stir until thick as in the photo (don't worry if pellets form). Turn off the heat and set aside.

Tip: Cooking milk with condensed milk and cornstarch is a trick to get a creamy gourmet ice cream without neutral alloy and without emulsifier.

Then break the coconut and remove all the pulp. Also reserve the coconut water.

Carefully remove all the coconut husk and cut the coconut pulp into pieces.

Put the coconut pulp in a blender and add your water. Beat until smooth as possible.

Tip: If the coconut is too thick, add a little filtered water.

Pass the blender mixture through a sieve, pressing down well to drain as much juice as possible.

Finally, blend the mixture prepared in the pan together with the remaining ingredients in a blender: the 250 ml of reserved milk, the juice drained in the previous step, the sugar and the vanilla essence (optional).

Beat until smooth and this is the preparation of your gourmet coconut ice cream! To get a textured gourmet ice cream, add a little of the coconut pulp obtained in step 6 - or, if you prefer, you can use it as grated coconut to prepare, for example, a creamy coconut cake.

Divide the preparation into ice-cream bags and tie it well, without leaving any air inside (this is what you should do so the ice-cream doesn't have ice crystals inside). Freeze for a minimum of 4 hours before selling and a maximum of 3 months.
